Description

These elegant Apricot Thumbprint cookies feature a buttery, melt-in-your-mouth shortbread base filled with a vibrant, tart apricot center. Perfect for holiday platters or a simple afternoon tea, they offer a professional finish with minimal effort.


Ingredients

  • 1 cup unsalted butter, softened to room temperature
  • 2/3 cup granulated sugar, plus more for rolling
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1/4 teaspoon salt
  • 1/3 cup high-quality apricot preserves


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius) and line two large baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together the softened butter and granulated sugar for 3 to 4 minutes until the mixture is light, fluffy, and pale.
  3. Add the egg yolk, vanilla extract, and almond extract, then beat on medium-high speed until the mixture is completely smooth and combined.
  4. Turn the mixer to low speed and gradually add the all-purpose flour and salt, mixing just until the white streaks disappear.
  5. Scoop approximately one tablespoon of dough at a time and roll between your palms into a smooth ball.
  6. Roll each dough ball in a small bowl of granulated sugar until evenly coated, then place on the prepared baking sheets spaced 2 inches apart.
  7. Use your thumb or the back of a small measuring spoon to press a well into the center of each ball, then fill each well with about half a teaspoon of apricot jam.
  8. Bake for 12 to 14 minutes until the bottoms are lightly golden, then let cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For the cleanest appearance, slightly warm the apricot jam in the microwave for 10 seconds to make it easier to spoon into the centers. If your dough feels too soft to work with, chill the rolled balls for 15 minutes before pressing the thumbprint to help the cookies maintain their shape while baking.
